Cajun Chicken and Shrimp Alfredo

Tender bites of chicken and juicy shrimp are coated in a smooth Cajun Parmesan sauce that pairs perfectly with fettuccine or any pasta you love. Ingredients
- 8 ounces uncooked fettuccine
- 2 chicken breasts, cut into 1-inch pieces
- 1/2 pound shrimp, peeled and thawed
- 1/2 teaspoon garlic powder
- 1/2 tablespoon Cajun seasoning, plus 1/2 tablespoon more
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 2 garlic cloves, minced
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
Instructions
1. Soften the cream cheese
Take the cream cheese out of the refrigerator at least 30 minutes before starting. If needed, warm it in the microwave for 20 to 30 seconds so it softens.
2. Cook the pasta
Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to the package directions.
3. Prepare the shrimp and chicken
If the shrimp are frozen, thaw them under cold running water. Pat them dry with paper towels.
Cut the chicken into bite-sized pieces. Season both the chicken and shrimp with the garlic powder and 1/2 tablespoon of Cajun seasoning.
4. Cook the shrimp
Heat the olive oil in a large deep skillet over medium-high heat. Once hot, add the shrimp and cook for about 3 minutes, turning once, until just cooked through. Remove them from the pan and set aside on a plate.
5. Cook the chicken
Add the chicken to the same skillet and cook for 5 to 6 minutes, stirring occasionally, until fully cooked and lightly browned. Transfer it to the plate with the shrimp.
6. Make the Alfredo sauce
Take the skillet off the heat and add the butter, heavy cream, cream cheese, minced garlic, and the remaining 1/2 tablespoon of Cajun seasoning.
Return the pan to the stove over medium heat. Stir until the cream cheese has fully melted into the sauce and everything is smooth.
Let the sauce bubble gently for 2 to 3 minutes, or until it starts to thicken.
7. Add the cheese and protein
Stir in the Parmesan cheese until melted and well combined. Return the shrimp and chicken to the skillet and let everything warm through for a few minutes.
Taste and season with salt and black pepper if needed.
8. Combine with pasta
Before draining the pasta, you can reserve a little pasta water. Add a tablespoon or two to the sauce if you want to loosen it slightly.
Drain the fettuccine, then toss it with the sauce until well coated.
9. Serve
Serve immediately, topped with extra Parmesan and chopped parsley if desired. A squeeze of fresh lemon juice is also a great finishing touch.
