General details
- Preparation time: about 20 minutes
- Chilling time: 40–60 minutes
- Difficulty level: easy
- Recommended pan size: 18–20 cm round pan
Ingredients
For the base
- 200 g oats
- 3 tablespoons cocoa powder
- 1 tablespoon ground cinnamon
- 1 pinch of salt
- 2 tablespoons finely chopped almonds
- 2 ripe bananas
- Natural sweetener of choice (such as stevia or erythritol)
For the cream
- 200 g cottage cheese, ricotta, or cream cheese
- 1–2 bananas
- 3 tablespoons plain yogurt or sour cream
- ¼ teaspoon vanilla extract
For the topping
- 60 g sugar-free dark chocolate (at least 85% cocoa)
- ½ tablespoon coconut oil
- Chopped walnuts or almonds, to taste
Method
1. Make the base mixture
Place the oats in a dry skillet and toast them for 3 to 5 minutes, stirring occasionally, until lightly golden and fragrant. Transfer them to a bowl and mix with the cocoa powder, cinnamon, salt, and chopped almonds. Blend or pulse the mixture until it reaches a finer texture. Add the mashed bananas and your preferred sweetener, then stir until you get a thick, shapeable mixture.
2. Shape the first layer
Divide the base mixture into two equal portions. Press the first half evenly into the bottom of your prepared pan. Arrange banana slices over this layer.
3. Prepare the cream filling
In a bowl, mix the cheese with the yogurt and vanilla extract until smooth and creamy. If you want the filling a bit sweeter, add a small amount of natural sweetener. Spread the cream evenly over the banana layer.
4. Add the top layer
Take the second half of the oat mixture and place it over the cream. Press gently to create an even top.
5. Chill
Refrigerate the cake for at least 30 minutes, or until it becomes firm enough to hold its shape.
6. Finish with chocolate topping
Melt the dark chocolate together with the coconut oil until smooth. Pour it over the chilled cake and sprinkle with chopped walnuts or almonds. Return the cake to the refrigerator for another 10 to 15 minutes so the topping can set.
Final result
You’ll get a dense yet creamy dessert with the natural sweetness of banana, the richness of cocoa, and a smooth, satisfying filling. It works beautifully as a healthier dessert or even as a sweet snack during the day.
Storage
Keep the cake in the refrigerator in a covered container for up to 3 to 4 days.
