For an 18 × 25 cm tray
For the base layers
- 400 g sugar-free digestive biscuits, finely crushed

- 40 g melted butter
- 10 g concentrated sweetener (1:4 type)

- 150 ml liquid cream
- 150 ml water
- 3 tablespoons brown rice flour (about 30 g)
- 1 teaspoon vanilla extract
- 10 g sweetener (1:4 type)
- 50 g soft butter
- 150 g coconut flakes
For the glaze
- 100 g sugar-free dark chocolate
- 1 teaspoon oil
For decoration
- Coconut flakes, for sprinkling
Method
1. Make the coconut cream
In a small saucepan, whisk together the brown rice flour, liquid cream, and water until smooth and free of lumps.
Add half of the coconut flakes and cook over low heat, stirring constantly, until the mixture thickens into a cream. Remove it from the heat, then stir in the vanilla extract and sweetener.
Let the cream cool completely. Once cold, mix in the softened butter and the remaining coconut flakes. You should end up with a smooth, fragrant filling.
2. Prepare the chocolate biscuit dough
In a large bowl, combine the crushed biscuits, cocoa powder, apricot jam, rum, melted butter, and sweetener.
Gradually pour in the liquid cream and, if needed, a little water, mixing until you get a soft, cohesive dough that can be rolled out easily.
Divide the dough into three equal portions. On a surface lightly sprinkled with coconut flakes, roll each portion into a sheet sized to fit the tray.
3. Assemble the cake
Place the first chocolate layer into the tray. Spread over half of the coconut cream.
Add the second sheet, then spread the remaining cream evenly on top.
Finish with the third sheet and press lightly to level the surface.
4. Make the glaze
Melt the sugar-free dark chocolate together with the oil over a double boiler, stirring until smooth and glossy.
Pour the glaze over the top layer and spread it evenly with a spatula.
5. Chill
Refrigerate the cake for at least 4 to 5 hours, or ideally overnight. This allows the layers to firm up and the flavors to blend beautifully.
