Preparation & Assembly

1.Prep the Ingredients :Rinse legumes and chop vegetables. 

Rinse and drain the chickpeas in a colander until water runs clear. Dice the cucumber and tomatoes into uniform bite-sized pieces, thinly slice the red onion, and chop fresh parsley.

2.Make the Dressing :Whisk citrus vinaigrette.

3.Toss the Salad :Combine all ingredients.
