Crispy Roast Potatoes with Garlic Herb Butter

Golden and crunchy on the outside, soft and fluffy in the middle, these roasted potatoes are made even better with a rich garlic and herb butter. They’re easy to prepare and make a wonderful side dish for holidays, family lunches, or any meal that deserves something extra special.

Why you’ll love them

This recipe takes everyday potatoes and turns them into a flavorful oven-baked side. The combination of butter, garlic, fresh herbs, and a touch of lemon gives them a fragrant, savory finish, while roasting creates that irresistible crispy crust.

Ingredients

Serves 4

For the potatoes

  • 1 kg potatoes
  • 2 rosemary sprigs
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the garlic herb butter

  • 100 g butter, softened
  • 2 garlic cloves, finely crushed
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon
  • 1 tablespoon chives, chopped

Method

1. Get the potatoes ready

Peel the potatoes and cut them into evenly sized chunks so they cook at the same rate. Place them in a bowl, season with salt and pepper, and drizzle with the olive oil. Toss well to coat, then spread them out on a baking tray lined with parchment paper. Add the rosemary sprigs and place the tray in a preheated oven at 200°C.

2. Make the herb butter

In a small bowl, combine the softened butter with the crushed garlic, chopped parsley, lemon zest, and chives. Mix until everything is evenly blended and aromatic.

3. Roast and finish

Bake the potatoes for about 30 minutes, then remove the tray from the oven. Spoon the garlic herb butter over the hot potatoes, making sure they are well coated. Return them to the oven and roast for another 15 to 20 minutes, or until they are deeply golden, crisp on the edges, and tender inside.

Serving suggestion

Serve these potatoes straight from the oven while they’re hot and fragrant. They pair beautifully with roasted meat, grilled vegetables, or festive main dishes.

Final result

You’ll get potatoes with a crisp, golden exterior and a soft, creamy center, finished with the rich taste of butter, garlic, and fresh herbs. Simple ingredients, but a truly impressive side dish.
