π Strawberry Marshmallow Fluff
This light and creamy dessert is soft, fluffy, and full of sweet strawberry flavor. It’s an easy chilled treat that comes together with just a few ingredients and makes a fun dessert for family gatherings, holidays, or anytime you want something simple and delicious.

- 2 cups fat-free Greek yogurt
- 1 package sugar-free strawberry gelatin
- 1/2 cup boiling water
- 1/2 cup ice-cold water
- 12 strawberries, chopped into small pieces
- 1 packet sugar-free mini marshmallows

1. Dissolve the gelatin
Place the strawberry gelatin powder in a large bowl. Pour in the boiling water slowly and stir until fully dissolved.
2. Add cold water
Mix in the ice-cold water and stir well. Place the bowl in the refrigerator for about 5 minutes so the mixture can begin to thicken slightly.
3. Whip the yogurt
In a separate mixing bowl, beat the Greek yogurt with an electric mixer on medium speed for 2–3 minutes until smooth and airy.
4. Combine
Slowly pour the slightly thickened gelatin into the yogurt while continuing to mix. Beat for another 2–3 minutes.
5. Make it fluffy
Continue whisking for 5–10 more minutes, or until the mixture becomes light, airy, and increases in volume.
6. Fold in the extras
Gently fold in the chopped strawberries and mini marshmallows until evenly combined.
7. Chill
Transfer the mixture to the refrigerator and let it chill for a couple of hours until fully set and fluffy.
8. Serve
Spoon into small dessert cups or ramekins. Top with extra strawberry pieces and mini marshmallows before serving if desired.
