🍗 Rustic Oven-Roasted Chicken & Veggies

A warm, hearty dinner with tender chicken and perfectly roasted vegetables. Easy to prepare, comforting to eat, and great for a cozy family meal 🤍

✅ Ingredients (Serves 2–3)

  • 1 small whole chicken or 4–6 chicken pieces
  • 3–4 medium potatoes (about 450 g / 1 lb), peeled and chopped
  • 2 carrots, peeled and cut into chunks
  • 1–2 onions, sliced
  • 2–3 tbsp oil or melted butter
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs like parsley, dill, or thyme (optional)

👩‍🍳 Method

1. Prepare the vegetables
Cut the potatoes and carrots into medium-sized pieces. Slice the onions.

2. Season the chicken
Pat the chicken dry with paper towels. Rub with oil or butter, then season well with salt and black pepper.

3. Assemble the dish
Spread the vegetables in a baking dish or roasting pan. Place the chicken on top so the juices flavor the vegetables as it cooks.

4. Roast
Heat the oven to 180°C / 350°F.
Cover the dish with foil and bake for 35–40 minutes.
Then uncover and continue roasting for another 15–20 minutes, or until the chicken is nicely browned and the vegetables are tender.

5. Finish and serve
Top with chopped fresh herbs if using, and serve while hot.

💡 Helpful Tips

  • Add whole garlic cloves for deeper flavor.
  • A little lemon juice brightens the dish beautifully.
  • Baste the vegetables with the pan juices halfway through cooking for extra richness.
  • Roast uncovered at the end for that golden, crispy finish.
