 White Chocolate Raspberry Heavenly Cake



Ingredients:

For the cake:

2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup whole milk
4 oz white chocolate, melted
1/2 cup fresh raspberries, mashed
For the raspberry filling:

1 cup fresh raspberries
2 tbsp sugar
1 tsp lemon juice
For the white chocolate frosting:

1 cup unsalted butter, softened
3 cups powdered sugar
4 oz white chocolate, melted
1 tsp vanilla extract
2-3 tbsp heavy cream

Directions:

Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix in the melted white chocolate and mashed raspberries until fully combined.
Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
While the cake cools, prepare the raspberry filling by combining the fresh raspberries, sugar, and lemon juice in a small saucepan over medium heat. Simmer for 5-7 minutes until the raspberries break down and the mixture thickens. Remove from heat and let cool.
For the frosting, beat the softened butter until smooth and creamy. Gradually add the powdered sugar, 1/2 cup at a time, until fully incorporated. Stir in the melted white chocolate and vanilla extract. Add heavy cream to reach the desired consistency for frosting.
Once the cakes have cooled, spread the raspberry filling on the top of one cake layer. Place the second cake layer on top and frost the entire cake with the white chocolate frosting.
Garnish with fresh raspberries and white chocolate shavings, if desired. Chill for 30 minutes before serving to allow the frosting to set.
