Lemon mousse with biscuit base is an irresistible dessert that combines crispy biscuits with an airy and creamy lemon filling. This fresh and light dessert is perfect for the spring and summer season, and the bright yellow color gives a festive touch that will impress your guests. Let's dive into the recipe and discover how to make this delicious dish.

Ingredients for lemon mousse

To make this delicious lemon mousse, you will need the following ingredients:

150 g digestive biscuits

75 g melted butter

2 dl whipping cream

200 g cream cheese

100 g sugar

2 tablespoons lemon juice

1 teaspoon finely grated lemon zest

1 teaspoon vanilla sugar

How to make the biscuit base

Start by crushing the digestive biscuits into fine crumbs. You can do this by using a food processor or by placing the biscuits in a plastic bag and crushing them with a rolling pin. Mix the crushed biscuits with the melted butter until you get a smooth mixture.

Press the biscuit mixture into the bottom of a cake tin to make the base. Make sure it is evenly distributed and well pressed down. Place the tin in the fridge while you prepare the lemon mousse.

Make the lemon mousse

In a large bowl, beat the whipping cream until it forms soft peaks. In another bowl, mix the cream cheese with the sugar, lemon juice, lemon zest and vanilla sugar until smooth and creamy.

Gently fold the whipped cream into the cream cheese mixture. This will give the mousse an airy and light texture. Once the mousse is well mixed, pour it over the biscuit base in the cake tin.
