Oven-Baked 3-Ingredient Crispy Potato Lollipops
These crispy potato lollipops are a fun, easy, and delicious snack made with just three simple main ingredients. Ingredients
- 4 large potatoes, peeled and cut into chunks
- 1 cup shredded mozzarella cheese
- 1 cup breadcrumbs

- Wooden skewers or lollipop sticks
- A little cooking spray or oil for brushing
Instructions
1. Cook the Potatoes
Place the peeled and chopped potatoes in a large pot and cover them with water. Add a little salt if desired. Bring the water to a boil and cook the potatoes for about 15 to 20 minutes, or until they are completely tender and can easily be pierced with a fork.
Drain the potatoes very well and let them sit for a few minutes so that any excess moisture evaporates. This step is important because potatoes that are too wet can make the mixture difficult to shape.
2. Make the Potato Mixture
Transfer the warm potatoes to a large bowl and mash them until smooth and creamy. Add the shredded mozzarella cheese and mix thoroughly until the cheese is evenly distributed throughout the mashed potatoes.

3. Shape the Potato Lollipops
Take a small portion of the potato mixture and roll it between your hands to form a small ball or oval shape. Insert a wooden skewer or lollipop stick into the center and gently press the potato mixture around it so it stays securely in place.
Repeat with the remaining potato mixture until all the lollipops are prepared.
4. Coat with Breadcrumbs
Place the breadcrumbs in a shallow bowl or plate. Carefully roll each potato lollipop in the breadcrumbs, making sure the entire surface is evenly coated.
Gently press the breadcrumbs onto the potato mixture so they stick well and create a crispy crust when baked.
5. Bake Until Golden and Crispy
Preheat your oven to 425°F (220°C).
Arrange the potato lollipops on a baking sheet lined with parchment paper, leaving a little space between each one. Lightly spray them with cooking spray or brush them with a small amount of oil. This will help the breadcrumbs become beautifully golden and crispy.
Bake for approximately 20 to 25 minutes, turning them halfway through the cooking time so they brown evenly on all sides.
