Shrimp, Corn, Potatoes & Smoked Sausage Foil Packs

🧾 Ingredients

  • 1 lb shrimp (peeled & deveined)
  • 2 cups baby potatoes (halved)
  • 2 ears corn (cut into chunks)
  • 12 oz smoked sausage (sliced)
  • 4 tbsp butter (melted)
  • 3 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • Salt & pepper to taste
  • Juice of ½ lemon
  • Fresh parsley (optional)

👩‍🍳 Instructions

1️⃣ Prep

  1. Preheat oven to 200°C (400°F) or heat grill.
  2. Boil potatoes for 8–10 minutes (just until slightly tender).

 Assemble Packs

  1. Lay out large sheets of foil.
  2. Divide potatoes, corn, sausage, and shrimp evenly.
  3. In a bowl, mix melted butter, garlic, paprika, Cajun seasoning, salt, pepper, and lemon juice.
  4. Pour over each pack.
  5. Seal foil tightly.

3️⃣ Cook

  • Oven: Bake for 20–25 minutes
  • Grill: Cook for 15–20 minutes, turning halfway

🌿 Finish

  • Open carefully (hot steam!)
  • Sprinkle with parsley and extra lemon juice 🍋

🌶️🔥 Tips

  • Don’t overcook shrimp—they cook fast!
  • Add a pinch of chili flakes for heat
  • Use heavy-duty foil to avoid leaks
