Shrimp, Corn, Potatoes & Smoked Sausage Foil Packs
Ingredients
- 1 lb shrimp (peeled & deveined)
- 2 cups baby potatoes (halved)
- 2 ears corn (cut into chunks)
- 12 oz smoked sausage (sliced)
- 4 tbsp butter (melted)
- 3 cloves garlic (minced)
- 1 tsp paprika
- 1 tsp Cajun seasoning
- Salt & pepper to taste
- Juice of ½ lemon
- Fresh parsley (optional)
Instructions
Prep
- Preheat oven to 200°C (400°F) or heat grill.
- Boil potatoes for 8–10 minutes (just until slightly tender).
Assemble Packs
- Lay out large sheets of foil.
- Divide potatoes, corn, sausage, and shrimp evenly.
- In a bowl, mix melted butter, garlic, paprika, Cajun seasoning, salt, pepper, and lemon juice.
- Pour over each pack.
- Seal foil tightly.
Cook
- Oven: Bake for 20–25 minutes
- Grill: Cook for 15–20 minutes, turning halfway
Finish
- Open carefully (hot steam!)
- Sprinkle with parsley and extra lemon juice


Tips
- Don’t overcook shrimp—they cook fast!
- Add a pinch of chili flakes for heat
- Use heavy-duty foil to avoid leaks
