🍎 Cozy Spiced Apple Cake

There is nothing quite like the smell of warm apples and cinnamon baking in the oven! This cozy, old-fashioned apple cake is packed with tender chunks of fresh apples, warm spices, and a soft, buttery crumb. It’s incredibly easy to whip up and makes the perfect treat for afternoon tea, breakfast, or a comforting evening dessert.

✅ Ingredients (Serves 8)

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional, but highly recommended)
  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2–3 medium apples, peeled, cored, and diced
  • ¼ cup chopped walnuts or pecans (optional, for crunch)

Optional Toppings:

  • Powdered sugar for dusting
  • A drizzle of light caramel sauce

👩‍🍳 Instructions

1. Prep the oven and pan
Preheat your oven to 350°F (175°C). Grease and lightly flour an 8-inch round or square cake pan so the cake releases easily.

2. Whisk the dry ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this aside.

3. Cream the butter and sugar
In a large mixing bowl, use a hand mixer to beat the softened butter and sugar together until light, pale, and fluffy.

4. Add the wet ingredients
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually pour in the milk and mix until combined.

5. Combine and fold
Slowly add your dry ingredients into the wet mixture, gently stirring just until the flour disappears (be careful not to overmix!). Gently fold in the diced apples and chopped nuts if you are using them.

6. Bake
Pour the thick batter into your prepared baking pan, spreading it out evenly. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool and serve
Let the cake cool in the pan for a few minutes before transferring it to a wire rack. Dust with powdered sugar or drizzle with caramel before serving.

💡 Tips

  • Best apples to use: Crisp, sweet-tart apples like Honeycrisp, Gala, or Granny Smith hold their shape and provide the best texture. 🍏
  • Crispy top: Sprinkle a tablespoon of coarse sugar over the top of the batter right before baking for a beautiful, sweet, crispy crust!
  • Serve it warm: This cake is absolute perfection when served slightly warm with a big scoop of vanilla ice cream. 🍨
