Slow-Cooked Meatball Stroganoff with Noodles
A comforting, family-friendly dinner that’s perfect for busy days! Tender meatballs simmer in a rich, creamy mushroom sauce and are served over buttery egg noodles. This slow cooker meal is hearty, flavorful, and incredibly easy to make.
Ingredients
For the Meatballs
- 2 pounds frozen fully cooked meatballs
- 1 small onion, diced
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
For the Sauce
- 2 cans (10.5 ounces each) cream of mushroom soup
- 2 cups low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
To Finish
- 1 cup sour cream, room temperature
- 2 tablespoons chopped fresh parsley
For Serving
- 12 ounces egg noodles
- 2 tablespoons butter
Instructions
- Add the frozen meatballs, diced onion, sliced mushrooms, and minced garlic to the slow cooker.
- In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, paprika, black pepper, and thyme.
- Pour the sauce over the meatballs and stir gently to coat.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- About 15 minutes before serving, stir the sour cream into the sauce until smooth and creamy. Do not let the sauce boil after adding the sour cream.
- Meanwhile, cook the egg noodles according to the package directions. Drain and toss with butter.
- Spoon the creamy meatballs over the buttered noodles and garnish with fresh parsley.
Tips
- Add a splash of beef broth if the sauce becomes too thick.
- Stir in a handful of grated Parmesan for extra richness.
- Serve with steamed green beans, roasted broccoli, or a crisp garden salad.
