- For the Lamb
- Lamb rack — 800 g
- Salt — 2 tsp
- Vegetable oil — 4 tbsp

- Onions — 3, quartered
- Dried prunes — 50 g
- Dried apricots — 50 g
- Dried figs — 50 g
- Garlic — 4 cloves
- Fresh ginger root — 4 cm, grated
- Ground coriander — 1 tsp
- Dried savory — 1 tsp
- Fresh cilantro — 20 g, chopped
- Water — 2 tbsp

- 1. Sear the Lamb
- Season the lamb rack with 1 tsp of salt, rubbing it well into the meat.
- Heat the vegetable oil in a large skillet and sear the lamb on all sides until beautifully golden-brown.
- Transfer the lamb to a baking dish.
- 2. Prepare the Onion & Dried Fruits
- In the same skillet, add the quartered onions, prunes, dried apricots, and dried figs.
- Add the garlic, grated ginger, ground coriander, and dried savory.
- Cook everything for 1–2 minutes, stirring well, until the onions and spices become fragrant.
- 3. Assemble the Dish
- Sprinkle the chopped fresh cilantro over the lamb.
- Arrange the onion and dried-fruit mixture on top and around the lamb.
- Pour in 2 tbsp of water.
- Cover the baking dish tightly with aluminum foil to trap the steam and juices.
- 4. Slow Roast
- Preheat the oven to 150°C (300°F).
- Place the covered dish in the oven and cook for approximately 1½ hours.
